Fruit taken from Walsh vineyard in the Woodbourne area and Doctor’s Creek from the Burleigh area.
Long, cool controlled fermentation using a dedicated aromatic yeast to enhance bouquet and citrus characters. Fermentation was arrested early for a lower alcohol, off dry wine character.
Citrus notes of ripe lemon on the nose, white orange blossom and soft florals with highlights of juicy mandarin in the background.
The palate is fresh and inviting, rich and rounded with fragrant ripe limes and lemon zest.
Enjoy now (probably best to wait till you’re home) and over the next 3-5 years.
