The fruit for this wine is sourced from predominantly from mature vines in our founding Falcon vineyard. Cold soaked for five days prior to inoculating for fermentation. Regular hand plunging and pumping-over for a high flavour extraction before maturation in French oak barriques.
Palate & Aroma: Ripe red plum with lifted spices and sweet red berries on the nose followed by a palate of sweet red fruits, mirroring aromatics, with a blackcurrent thread bordered by black pepper and a long savoury finish.
