The fruit for this wine was harvested almost exclusively from mature vines in our founding Falcon vineyard. Cold soaked for five days prior to innoculating for fermentation. Regular hand plunging and pumping-over for a high flavour extraction before maturation in French oak barriques.
Palate & Aroma: Ripe red plums and muscovado cherries with toasted oak. Dry soft acids with mulled spice, red berries and tart morello cherries finishing with ripe plum and a balance tannin
